Coconut Chip Recipe

Incorporating the highly beneficial coconut oil into your diet is so easy with this simple 5-minute recipe!

When my mom and I first learn the benefits of coconut oil, we both wondered how in the world we would incorporate the strong tasting oil to our diets. There was absolutely no way I was going to eat it with a spoon!

Fortunately, she found this simple recipe, and we’ve been using it ever since. Eventually, I did find other ways of eating coconut oil, like in salad, smoothies, hot drinks, and in cooking (eggs especially) but none compare to the easiest and most delicious of them all – coconut chip melts.

We use dark chocolate chips in this recipe, and so the sugar content is quite minimal. One ice-cube size square, which contains 1 Tbl chips & 1 Tbl coconut oil, has only 4-5g sugar this way, and very few carbs (less than 3% DV). The fat content is nearly 23% DV, all good, healthy fats for you – and that is mostly saturated fat.

I’m still working on creating this recipe using cocoa powder and some natural sweetener or sugar alcohol. That’s my “Health OCD” kicking in =)

I use dark chocolate because it does have some health benefits, including anti-oxidants, and there’s the fact that the fatty acid profile of cocoa and dark chocolate is excellent. The fats are mostly saturated and monounsaturated, with small amounts of polyunsaturates – which is really good!

Extra virgin, cold-pressed coconut oil also has it’s benefits, including keeping your hair and skin looking nice, fighting bacteria, and it has been shown to help with fat loss. It’s high calorie, filling, and helps lower bad cholesterol – which is what makes it such a great addition to anyone’s diet!

This recipe is so simple, takes very little time, and is so good. Eating this recipe is what took me from disliking coconut very much, to accepting the taste and actually crave it sometimes.

Yep, you read that right, in the beginning, it took a whole lot of will-power for me to eat even half of one of the cubes – I really didn’t like the coconut taste. But, after forcing myself for a month or so (this is good for me… this is good for me…) I finally came to really like the taste.

It’s a great relief that I no longer have to force myself to eat this wonderful chocolate coconut snack!

These healthy coconut chocolate melts are the perfect way to add coconut to your diet! Plus, they taste amazing!

Serves: Makes 16 regular size ice-cube melts

Ingredients For Coconut Chip Recipe

  • 1 cup extra virgin coconut oil (preferably cold pressed, but any kind will be beneficial for you)
  • 1 cup dark chocolate chips (not un-sweetened)


  1. Melt the coconut oil and chocolate together over low-medium heat in a double boiler, or in a make-shift one using two pots of similar sizes. Make sure to stir it so it does not burn on the bottom.
  2. Once fully combined, but not very hot, pour your mixture into ice-cube trays of any size you please. The regular ice-cube size will equal 1 Tbl each of coconut oil and chocolate chips, which is equal to 1 serving of coconut oil.
  3. Freeze the ice-cube trays for 20 minutes, then pop your cubes out and store them in the refrigerator as they will melt at room temperature after a little while.
  4. Enjoy!
